So I thought I'd give you long overdue reply to update you about what I'm working on. I'm now in Atlanta starting up a new brewpub. I first moved to Georgia in 2012 to be the Brewmaster for a brewpub in Statesboro (where Georgia Southern University is), then to Atlanta to be the Head Brewer for Orpheus. (If you can, purge the carboy w/ CO2 before racking.) At 48oz plus however long it sat, I found it strong even after it sat awhile, but it was a crowd pleaser and took a Gold at a local comp. On brew day it's become a habit of mine to wipe the kettle out with a damp towel, and then I'm good to go. I'm using two pouches of the Goya passionfruit puree, 1 lb Carapils, 1 lb orange blossom honey, 6 lbs wheat malt extract, 1 lb dry wheat malt extract, 1 oz Tettnang, and Wyeast 3068 Weihenstephan Wheat. It's basically a version of the Northern Brewer's Bavarian Hefe kit with some modifications based upon George Hummel's Raspberry Weizen.<br /><br />To double-check: I cut the puree in half per your suggestion, but this recipe may be a bit stronger than the one you used. Should I up the amount a bit? We only brewed this once - for a 5 gallon...Hi Eric! We only brewed this once - for a 5 gallon batch we did pretty much 50/50 between 2 row and wheat, and a half pound of 15L crystal, and about 20 IBUS in one 60 minute addition (or 1st wort hop). American Ale yeast. When it was done fermenting, we transferred to secondary and added 48oz of passionfruit puree (Goya brand - comes in pouches). You'll likely get a little mini-fermentation going in there. I think we let it sit a couple weeks at room temp. Anyways, that was a bit too tart, but mellowed nicely after sitting in the keg a couple months so I'd personally dial that down, maybe even cut it in half. If I were to do this again, I'd try a "real" wheat beer strain of some kind to give it a bit more character. If you brew one, let us know!
