But I didn't do anything with the puree, I just put it right in secondary - pour it in first, then rack the beer on top of it to avoid splashing/oxidation. Didn't even use a grain bag. Cheers, and let me know how it turns out!Matthttps://www.blogger.com/profile/06629101337818184267noreply@blogger.comtag:blogger.com,1999:blog-1640800686420416704.post-34936462092036526542011-12-07T08:39:51.907-06:002011-12-07T08:39:51.907-06:00Ok, the time has come for the passionweizen. I'...Ok, the time has come for the passionweizen. I'm using two pouches of the Goya passionfruit puree, 1 lb Carapils, 1 lb orange blossom honey, 6 lbs wheat malt extract, 1 lb dry wheat malt extract, 1 oz Tettnang, and Wyeast 3068 Weihenstephan Wheat. It's basically a version of the Northern Brewer's Bavarian Hefe kit with some modifications based upon George Hummel's Raspberry Weizen.

To double-check: I cut the puree in half per your suggestion, but this recipe may be a bit stronger than the one you used. Should I up the amount a bit? Also, did you sanitize the puree or use Campden tablets, or just thaw, open, put into grain bag, and rack beer on it into secondary?

Thanks Matt!Anonymousnoreply@blogger.comtag:blogger.com,1999:blog-1640800686420416704.post-24470340272676908732011-09-06T10:19:01.773-05:002011-09-06T10:19:01.773-05:00Excellent, let us know how it turns out!Excellent, let us know how it turns out!Matthttps://www.blogger.com/profile/06629101337818184267noreply@blogger.comtag:blogger.com,1999:blog-1640800686420416704.post-19619610155961848442011-09-06T06:02:41.304-05:002011-09-06T06:02:41.304-05:00Matt:

I may add some lactose in the secondary as well to offset some of the tartness of the passionfruit.Anonymousnoreply@blogger.comtag:blogger.com,1999:blog-1640800686420416704.post-20591729667807641952011-08-31T16:30:14.491-05:002011-08-31T16:30:14.491-05:00Thanks Matt:

My wife is from the Caribbean, and I'd like to start experimenting with some of the local fruits and spices. Love fresh passionfruit juice, but I've not seen the Goya pouches (although I know the brand). Where to find?Anonymousnoreply@blogger.comtag:blogger.com,1999:blog-1640800686420416704.post-61067763014956498102011-08-30T14:30:15.572-05:002011-08-30T14:30:15.572-05:00Hi Eric! We only brewed this once - for a 5 gallon batch we did pretty much 50/50 between 2 row and wheat, and a half pound of 15L crystal, and about 20 IBUS in one 60 minute addition (or 1st wort hop). American Ale yeast. When it was done fermenting, we transferred to secondary and added 48oz of passionfruit puree (Goya brand - comes in pouches). You'll likely get a little mini-fermentation going in there. I think we let it sit a couple weeks at room temp. Anyways, that was a bit too tart, but mellowed nicely after sitting in the keg a couple months so I'd personally dial that down, maybe even cut it in half. If I were to do this again, I'd try a "real" wheat beer strain of some kind to give it a bit more character. If you brew one, let us know! Cheers.Matthttps://www.blogger.com/profile/06629101337818184267noreply@blogger.comtag:blogger.com,1999:blog-1640800686420416704.post-78361862347906818142011-08-30T12:05:07.401-05:002011-08-30T12:05:07.401-05:00Matt:

Could you post your recipe, perhaps even the revised version if you reformulated the grain bill?

Thanks!

EricAnonymousnoreply@blogger.com
